Chicken Breasts with Rice and Peas

 

This is very simple recipe that you don't need much time to prepare it, it will take around 15 minutes.

Ingredients:

  • Chicken breasts
  • Rice
  • Peas (for this recipe I used the frozen ones)
  • Olive oil
  • Gourmet seasoning

Preparation:

  •  Take a pot and put water in it and let it heat up, while the water is heating up you can right away put rice and peas in it. If the peas are frozen don't worry about it.
  • I used regular white rice for this recipe and it takes around 10 minutes for the rice and peas to be cooked. Just couple of minutes before the rice is finished add a little gourmet seasoning to it. Leave it cooking for one minute and taste it to see is it salty enough and that the rice and beans are nicely cooked. 
  • When it is done just put the cover on the top and move it aside.
  • While the rice was cooking you should take your chicken breasts and season it. Take the pan and let it heat up and then add olive oil in the pan and let it heat up as well. If you're using the whole chicken breasts like I am and nut cutting it into thinner pieces you would put the upper part of the chicken breast on the hot oil and let it bake nicely.
  • Put the cover on and let the chicken breasts get nice color, it will take 3-5 minutes to do it. Then when you turn around on the other side you want to put the heat on the stove a little bit down. Put the cover back on and leave it for another 5-6 minutes. 
  • Then just move the pan on the side and let it sit like that for several minutes while you prepare the rice and peas.
  • Take the pot with your rice and beans and strain the water from it. Put it on the plate and then take the chicken breasts and put on it. Take the oil that you have in the pan and pour it over the chicken.
